Tonight we are going to talk about using MS Office on a Mac, a subject that Chef JoAnna is somewhat of an expert, and some great cooking tips for geeks. Welcome to the show JoAnna.

Ask JoAnna about her background

 

  • As a Chef
    • College major was foreign languages, so fluent in French & Spanish. VERY useful in the kitchen.
    • After long, twisted career that involved Human Resources, website design & graphic design, i went back to school in 2002 to pursue a culinary degree.
  • As a MacGeek
    • first computer owned was a quadra 605, we'd play myst on it, it would take forever. Myst and Riven were amazing in 1993!!!
    • I've had one desktop, but the rest were laptops. currently (I use a 1.33GHz PowerPC iBook G4, running 10.4 with 1.5 GB ram) and i'm just waiting for it to die before i move on to the macbook.
    • I designed my logo, created my whole website myself, do all my own SEO. design & produce biz cards, postcards, t-shirts, guest menus, wine class booklets, etc.
    • I look at my technology as a pocketknife. There's all these little gadgets and i need to use them ALL.
  • Her current work
    • style of cooking: formal, elegant private dinners
    • cooking lessons, often as gift certificates
    • guest spots on tv shows, like mtv's next, survival of the fittest, Kathy Griffin's B-List. Quicktime Movie
    • ChefsLine.com, giving live culinary advice. Over TG week i did live, interactive video shows answering Q&A. Sitting in my backyard, doing the chat on my laptop, over a logitech USB mic and an icecam USB camera. The entire production suite can fit in my purse.

  • Background
    • i can tell the story, it's too much to type out :-)
  • Favorite Tips and tricks
    • learn the command codes, and learn how to make your own
    • customize your own toolbars. Saves so much time. (replace the print button that gets a dialog box with the one that automatically prints on clicking)
    • use the autotext. If you don't have an autoexpander (ti4m) this is soooo valuable.
    • Always have a naming convention that you adhere to for versions.
    • templates templates templates. half page menus, full page class handouts, invoices.
    • learn how to integrate word, excel & mac's native e-mail program. set up mail once, and then it will work with the 'services' menu
    • learn how to integrate your native address book with the entourage addr book
    • learn how to integrate ical with entourage. They sync with each other, and also with my cellphone.
  • What about the next version of the program, your thoughts and what's cool about it?
    • A time-management, task-launching widget joins Office for Mac 2008
    • desktop publishing tools are improved. i'd like to get into that.
    • SmartArt Graphics - OH NO. you thought your boss's ppts were bad, you ain't seen nothing.It's very pretty, but i think that it's going to be a time-waster.

Talk about MacGeek cooking Gadgets

 

  • A. Chopsticks, skewers or fondue forks so you can eat things and keep your hands clean.
  • B. Microplane, for grating everything: cheese, chocolate, garlic, ginger, etc. etc.
  • C. Silicone Spatula with a long, wide blade. Use to stir, whip, fold, beat, lift, spread, scrape, ... great all purpose tool.
  • D. Food Loops! They're made out of silicone and look like fishing lures, but they're great for tying up roasts and holding things together.

  • I also have an infrared thermometer, but it's mostly a toy. The surface temperature doesn't matter for cooking... the INTERNAL temp is what you need, and that requires a probe thermometer.
